Typical dishes involve noodles, rice, soya sauce, tamarind, rice vinegar, chilli and oyster sauce, fresh ginger, limes and coriander – giving an authentic flavour and a real gastronomic experience. Just like Thai food, Chinese food is cooked at high temperature for a short time so it retains its flavour and nutritional content.
Spices are pounded and bruised rather than chopped, releasing the full flavour and oils resulting in a distinct taste and texture.
