Chinese food involves cooking mainly with noodles, rice and soya sauce. Flavouring and sauces are added like tamarind, rice vinegar, chilli oil, ginger, limes and coriander. Adding this sauces and spices gives an authentic flavour and a real gastronomic experience. Just like Thai food, Chinese food is cooked at high temperature for a short time so it retains its flavour and nutritional content.
Spices are pounded and bruised rather than chopped, releasing the full flavour and oils resulting in a distinct taste and texture.
