Paneer Coconut Vegetable Curry With Steamed Rice
Favourite with older and children, this is a very easy and tasty curry to make. Suitable for both vegans and vegetarians its gluten free. Do you have one of those days when you are tired and don’t really want to cook. Eh you do have to cook, as everyone is hungry and needs some feeding. Here is a very simple curry that has basically NO spices, apart from pepper and still tastes very yummy. Try is out, I can almost guarantee your family members will love it and the plates will be empty in few seconds without any complaints!
1/2 slab of chopped Paneer
1 chopped Capsicum
1/2 can of coconut milk
1 table spoon of tomato puree
salt and pepper to taste
2 table spoon oil
1 Heat the oil and cook the onions till golden brown keep them aside
2 In the same oil add the paneer and cook till golden brown keep them aside
3. In the same oil cook the chopped capsicum till soft and tender
4. Now to the capsicum add the the onions, paneer tomato puree, salt and peeper and cook for few minutes till the food is pipping hot.
Steamed Coconut Basmati Rice
Steamed Coconut Rice compliment this curry and they are so easy to cook. All you have to do is open the pouch and cook the Tilda Coconut rice in the microwave for 2 minutes.
If you don’t have the microwave you can follow the instruction on the packet on how to stir fry the rice.
