Basic Facts Sugar Free Carrot and Beet Halva: “Halwa” “Halua” or “Haleveh” is popular dessert of many countries like South Asia, North Africa, Central Europe, Malta etc. and is a dessert dish. This is usually made with sugar and flour but we are going to use the healthy option. Carrots and beetroot are low calorie vegetables and dates. Dates are high in iron content and rich source of vitamins and minerals. Consuming dates regularly can help to lower cholesterol and they are high in fibre so helps improve digestive system and help in preventing abdominal cancer. It contains natural sugar: glucose, sucrose and fructose and hence can be eaten as an alternative to chocolates or sweets.
1 cup Beetroot – peeled and grated
1 cup Carrot peeled and grated
1 cup milk full cream or skimmed milk (depending on your preference).
½ cup chopped dates without seeds (or Sugar – 1/2 cup)
2 tbsp. Ghee
5 Cashew nuts
10 to 15 Sultanas
1/2 tsp Cardamom powder –
Step 1 Heat 1 tbsp. of ghee in a non-stick pan.
Step 2 Add in beetroots and carrots and sauté for few minutes still the flavour of the ghee is mixed.
Step 3 Add milk and keep cooking on low flame when the consistency is reduced to half add the dates (if using sugar add it now) and keep cooking till the milk dries up and the pulp leaves the pan.
Step 4 Remove the pulp and keep aside.
Steps 5 in the same pan add the rest of the ghee and roast the cashew nuts till golden, add in sultanas and sauté for a min.
Add the pulp cardamom powder and mix well and serve.
